The perfect water temperature for coffee is between 195–205°F. Too hot extracts bitterness, too cool under-extracts. The sweet spot unlocks flavor without harshness.
Dark roast doesn't mean more caffeine. The roasting process actually burns off caffeine slightly. Both roasts have similar amounts — it comes down to bean type, not color.
Coffee arrived in America during British colonization in the 1600s. Tea was actually more popular than coffee in the early Colonies. Both have deep American roots.
